Anyway, I made these yummy cream puffs for my dinner with friends last weekend and I'm thinking of whipping up a batch just for me to enjoy while watching the Red Carpet. I didn't really make any huge adjustments to this recipe when I originally made them, but next time I will cut the filling in half (which is reflected in my recipe below). I did follow the suggestion of one of the reviewers to add the eggs all at once. The hot fudge sauce is my own addition. These are sooo good and sooo easy.
Mix together pudding mix, cream, milk, and 1/2 tsp vanilla. Cover and refrigerate to set.
Preheat oven to 425ยบ. In a large pot, bring water and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball.
Crack open the eggs into a small bowl. Add a teaspoon of vanilla. Transfer the dough mixture to a large mixing bowl and immediately add the bowl of eggs. Mix on medium speed for 2-3 minutes (until the dough gets tacky and starts to stick to the sides of the bowl). Drop by tablespoonfuls (or use a cookie dropper) onto a parchment-lined baking sheet.
Bake for 20 minutes. Remove from oven and poke a toothpick into the side of each puff to let the steam escape.
When the puffs are cool, split them in half and make a "sandwich" using the pudding mixture as the filling.
Warm the hot fudge sauce in the microwave and drizzle over the puffs. Keep in the fridge until ready to serve.
