Herb Roasted Potatoes

I'm weird... I prefer cooking to eating. Last night I made a huge pan of baked ziti. Ate one portion, saved one portion for dinner for another night, and took the rest to work. I think everyone appreciates my strangeness because it means they get to eat. LOL.

For dinner tonight, I wanted something simple. Herb Roasted PotatoesSo I adapted this recipe to what I had on hand. Turned out delish. Don't yell at me for not eating enough. It falls on deaf ears!


  • one large potato

  • 1/2 Tbsp olive oil

  • 1/4 tsp sea salt

  • 1/4 tsp Herbs de Provence


  • Preheat oven to 450ยบ. Peel and cube the potato. Place the potato in a bowl and toss with remaining ingredients. Spread out potato cubes in a single layer on a cookie sheet. Bake for 25-30 minutes, stirring occasionally. Serve immediately.

    Makes one serving.
